Weekend Fun

Yesterday, I had lunch with Nikki at the Blackhorse that was supposed to be to celebrate her graduating college, but then, it shifted focus to congratulating her to getting a REAL JOB!!!! so proud of her!

I watched Blake in the afternoon for a few hours.

Then, I went out to see the movie Country Strong with two older friends, Christina and Jen. I had a BLAST! It was fun to break out of my "usual group" of friends. They are really nice and fun to hangout with!

Today, I had a dance party in my room for my workout. It was fun! Then, I showered and spent the afternoon browsing blogs and looking up recipes in my big pile of cookbooks that I got from the library. I found 3 that I want to try! :)

This evening, I watched Maddie. I brought her Christmas present (hey, better late than never, right?) and she got SO EXCITED when she saw the bubble bath..haha. Her parents already gave her a bath, so she will just have to enjoy it another day.. but her parents liked the book/cd I made that has my voice reading the book to her. Each time you are supposed to turn the page, a sleigh bell rings. My mom found the idea in a magazine and I thought it was cute, so I did it for some of the little kids I watch regularly!

Liquid Egg Whites
Spinach

I'm getting really excited about cooking, so hopefully it just keeps getting better and better!

Last night at the basketball game, I won 30 plus dollars for on campus dining!
I made a 3 pointer in front of everybody in the Dunn Center!

Cooking Attempt #2 and feeding the homeless

My 2nd attempt at cooking for my family was another SUCCESS!!! :) They liked it even better than my first dinner! and omg, it was SUPER EASY and healthy!

Coca-Cola Chicken Recipe

1 cup ketchup
1 cup salsa
1 can diet coke (or regular coke if you want)
16 oz. boneless chicken

Mix all ingredients in a crockpot. Cook on high for 4 hours. Serve and DEVOUR!

Before dinner, my mom, dad, brother, and I all went to their church to help serve dinner and talk with some people who are homeless. It was a GREAT experience. I enjoyed helping out and just having conversations with all of the guys. I hope I can do it again!

I actually SLEPT IN til 9:00!

Did a P90x video. (another goal of mine is to mix up my workouts every now and then)

Babysat little Chandler. (She turns 2 in May, and is starting to talk more..she can say the easy little words like car, ball, etc...but her mom said they are practicing Kelsey! She is ALMOST there...I bet a few more tries, and she will have it down pat! Hearing her mom say that just MADE MY DAY..I love all my precious kids that I babysit, and I feel so close to them and hearing that just made me feel extra special!)

Grocery shopped...my kitchen is now FULLY STOCKED! YUM!

Then, my family met my little cousin and aunt for dinner at Longhorn Steakhouse!
