TigerNut Smoothie Mix Super Boost Protein Bars + Review

I recently discovered TigerNut while browsing through Instagram and had to check it out.  Did you know... TigerNuts are not nuts, they are small root vegetables which comprised 80% of our Paleo ancestors’ diet around 2 million years ago. This ancient superfood originates from Africa. It is currently cultivated in West Africa & Spain. 

Organic Gemini was kind enough to send some TigerNut Smoothie Mix for me to try!
TigerNut Smoothie Mix is a powerful smoothie booster that improves the gut's well-being and potentially strengthens the immune system. The combination of energy-packed protein and prebiotic fibers controls cravings & makes you feel fuller longer.


We loved it mixed into our smoothie bowls! Smoothies don't usually hold Jared and I over for too long, but this really did make us feel fuller longer. It's not overly sweet, but it's not too "earthy" tasting either, like some other powders we've added into smoothies. 


Another way we enjoyed it was in our oatmeal. 

We also mixed it into some no bake protein bars! YUM! 


                                   
What You Need:
1/2 cup milled flaxseed

1/2 cup Vanilla Almond Whey protein powder
2 tablepoons TigerNut Smoothie Super Boost
1⁄2 cup peanut butter
1 tablespoon chia seeds 
1⁄2 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 cup milk  


Mix everything in the food processor until a batter forms. Then, spread evenly into a baking dish. 

*Optional* You can top with peanuts or another topping of your choice. 

Freeze for about 2 hours and then cut into squares.

Creamy Spinach and Chicken Casserole + Nancy's Yogurt Review

This casserole is super creamy and cheesy. It's very easy to make and I like to call it healthy "comfort food" because it hits the spot, without a lot of heavy ingredients. Hope you enjoy!  


Creamy Spinach and Chicken Casserole



Ingredients:

1 lb. ground chicken
16 oz. riced cauliflower 
4oz baby spinach 
1 large egg
½ cup Nancy's cream cheese
½ cup shredded mozzarella cheese
Garlic powder, Salt and pepper to taste 



Directions:
Preheat oven to 450°F. 
Boil the riced cauliflower. 
Heat ground chicken with olive oil on the stovetop until fully cooked and no longer pink.
Drain cauliflower and Allow it to cool. Return back to the warm pot and mix in the spinach. After it's mixed well, squeeze out as much liquid as possible.
Place the cauliflower mixture in a bowl and add the egg, Cream cheese, salt, pepper and garlic powder. Mix to combine.
Transfer the mixture to a glass baking dish.
Bake in the oven for about 18 minutes until a little browned on the edges.
Top with mozzarella cheese. Bake another 8-10 minutes until cheese is melted and edges are brown.

Nancy's Yogurt has quite the line up of yummy foods. 


The cottage cheese was delicious and it's one of my favorite night time snacks. 



Jared enjoyed his favorite night time snack of a yogurt bowl. The organic yogurt is so thick and creamy!!! 

One morning, I made some toast with cream cheese and peanut butter. The combo is insanely delicious!!! You've gotta try it sometime! Nancy's cream cheese is super thick and creamy, just the way we like it. YUM! 


What we love about Nancy's is the fact that they don't add weird ingredients to their products. They are FRESH and taste absolutely delicious naturally!

Almond Protein Cheesecake Bites + Kite Hill Foods

Kite Hill is the first and only company to create plant-based food using time honored techniques. They make buttery fresh ricotta, aged nut milk delicacies, creamy almond milk yogurt, and fantastic entrĂ©es and desserts — all out of fresh nut milk.


We were excited to try some almond milk based cream cheese and yogurt. We had never eaten anything like it before. 

Our Thoughts:
The cream cheese spreads are super creamy and tasty! They taste even creamier than regular cream cheese and the one with chives had just the right amount of flavor! 


We used it on top of our pork plantain nachos. It added SO MUCH creaminess to the dish and we really enjoyed it for being such a simple meal. We couldn't believe how much taste it brought to the dish. 



We also used it inside some easy turkey roll ups for a quick lunch one day. All we did was spread some in the middle and roll the turkey up. EASY AND SO GOOD! 



We also enjoyed the yogurt. It was so much creamier than regular yogurt and the flavor was on point! We couldn't believe how much it tasted like real frozen yogurt when you put it in the freezer for a little while before eating. SO AWESOME! 

But, our favorite thing we made with it, by far, would be these Almond Protein Cheesecake Bites!!! 



Cheesecake bites 
1/2 cup kite hill cream cheese
1/4 cup full fat cottage cheese 
1 egg
1 scoop Nuts-n-More Vanilla Almond Whey protein powder 
2 tablespoons cane sugar 

Mix all ingredients in a food processor or blender until even. 

Pour into mini muffin tins. Mine made about 20 bites total. 

Bake at 325*F for about 15 min. Turn the oven off and let them sit inside for another 5 min.

Store in the fridge. 

Optional:
Top with "protein frosting". Just combine a scoop of your favorite protein powder with some plain greek yogurt and voila! It's delicious and packs a bigger protein punch in each bite.

BBQ Pizza Pot Pie

Say "I LOVE YOU" with these BBQ Pizza Pot Pies! 


Creating new recipes is a huge way for me to show Jared that I love him. We love enjoying meals together and pizza is definitely one of our favorites! I wanted to add in a little twist on the traditional pizza, so I went with a pot pie using some Puff Pastry Dough! 

Ingredients:

1/4 cup sautéed red onion
1 cup cooked pork (cut into bite sized pieces)
2 slices turkey bacon
1/4 cup pizza sauce 
1/4 cup BBQ sauce 
1/2 cup cooked corn
1 & 1/4 cup shredded mozzarella cheese 
1 package of Wewalka Pastry puff 

Directions:
Combine pork, red onion, turkey bacon, BBQ sauce, pizza sauce, and corn in a skillet. Heat until turkey bacon is cooked. 


In two 16 oz. ramekins, pour about 1/4 cup cheese on the bottom, 1/3 of the meat and sauce mixture from skillet, then another 1/4 cup layer of cheese. 

In two 7 oz. ramekins, do the same layering process as above, just with half the amount of cheese and meat mixture. 


Next, use your 16 oz. ramekins to outline a circle on the puff pastry dough. Cut them out and stretch them so they will fit over the sides of each ramekin. Cut a slit in the middle of each pastry dough layer.  For the 7 oz. ramekins, I used the remaining dough to cut strips and placed them across the top of the ramekins. 


Then, it's time to bake! I baked these on 400*F for about 10 min. Keep an eye on yours because ovens can vary. Bake until they turn slightly brown.

Sweet Potato Flaxseed Muffins

These Sweet Potato Flaxseed Muffins are extremely easy to make and are perfect for your pre-workout fuel, anytime snack, or dessert! Hope you enjoy!


Ingredients:
1 and a half cups oats
1/2 cup Purely Inspired Vanilla Whey protein powder 
1/4 cup milled flax seed 
Pinch of baking powder
Pinch of cinnamon
3/4 cup cooked sweet potato 
3/4 cup milk of choice 
1 egg
1/2 cup peanut butter 




Throw everything in a food processor and blend for about 2 minutes or until a batter forms. 

Distribute batter about 3/4 full into 12 muffin tins.


Bake at 350*F for about 25 minutes. Be sure to keep an eye on them because every oven is different.

Friday Faves

Happy February! Today, I've compiled a round up of some favorites. 

 Sweet Potato Poppers 
When you just can't decide what you want to top your sweet potato with, just do a little bit of everything! Peanut butter, hummus, turkey bacon & pb, and coconut oil were my choices for this plate. Yum! 


 Tweaking this Almond Protein Cheesecake Bite recipe a little and NAILED it on the 2nd try. Will be sharing soon :) 

 We finally found Kodiak Cakes Pancake mix at the store and made some pretty epic breakfasts! This was Jared's combo of coconut butter, chocolate stevia, and pb. 

Researching all about the benefits of sorghum and coming up with some cool new ways to eat it when it's POPPED! It's so little and looks a lot like miniature popcorn. I'm a big fan! 

 Making some really yummy sandwiches with Kite Hill Foods cream cheese that's made with ALMONDS. It's so good and is perfect on an egg and turkey bacon sandwich with Mikey's muffins! 

 FitSnack is really stepping up their snack game! This box was full of regular sized products. The Organic Greens are a favorite of ours to mix in smoothies, yogurt, and oatmeal. The Quinoa cups are super convenient for those times you just don't have time to cook a meal. The Salad Power is a great addition to smoothies as well.

NEWBORN BABY SNUGGLES!!!!
Our friends, Kaytie and Calvin, just had this sweet baby girl. She was only 5 days old when I got to meet her! She is so sweet. I love babies!

PB Protein French Toast

PB Protein French Toast 


I loosely followed THIS RECIPE with a few tweaks of my own. 

Ingredients:

2 slices Mikey's sliced bread
2 eggs
1 tablespoon Purely Inspired Powdered PB
1 tablespoon Whey Protein 
1/4 cup Coconut Almond Milk 
Topped with Coconut Butter 

Directions: 
In a bowl, whisk your whey protein, powdered peanut butter, eggs, and coconut almond milk until all lumps disappear.



Dunk your bread slices into the egg batter, making sure they're completely covered with egg mixture.  


Turn your stove to medium high heat and flip once each side is browned a little. 


With the remaining egg mixture, we just scrambled it on the skillet and turned it into protein eggs. 

Afterwards, garnish the french toast with whatever toppings you'd like. We chose coconut butter on ours because we think it's a great combo with peanut butter.
