Ingredients: 1 Large Ripe Plantain
1 scoop Purely Inspired Vanilla Protein Powder
1/3 cup milk
cinnamon to taste
Sprinkle of stevia/sugar *optional*
Blend all ingredients in a food processor for about 2 minutes or until smooth.
Divide Batter into 10 muffin tins.
Bake at 350*F for about 20 minutes.
We loved these plain, but we also added a dollop of greek yogurt on the top for some "frosting". These are perfect for a healthy dessert or before your workout!
