Easy Mexican Omelette and teaching news..

I tried something new and had to share it with you! It's SO easy, healthy, and mighty tasty!!
Mexican Omelette!
Ingredients: 1/2 cup egg substitute 1/4 cup Mexican Four Cheese Salsa (as much as you desire) Non-stick Cooking Spray


Directions: Spray skillet with non-stick cooking spray. Pour egg substitute into skillet. Heat on level 7/8 until it is almost cooked. Sprinkle cheese on one side. Fold omelette in half. Let the cheese melt. Put on plate and pour desired salsa over omelette. EAT! 
Easy peasy lemon squeezy!!!

This past Saturday, I went to my room and did a little rearranging. (I didn't really have to do much because everything that I need is already there! I was VERY BLESSED to have a TON of stuff from the previous teacher. She retired and left everything!!!)

Super SEVEN Surprise Giveaway!!!

Before I talk about the giveaway, I just wanted to share what I've been up to lately...

I was in a FLASH MOB!!!!
It was SO much fun! My DANCE IT OUT class at the YMCA participated in it. We danced in the middle of the "Taste of Country Festival". The songs we danced to were "Sexy and I Know It" and "Cricket on a Line". 


That has always been on my bucket list, and I can finally scratch it off! If the opportunity comes up again, I will DEFINITELY participate!!! It was a blast!!!

I watched Myrtle play in her little golf tournament and SHE WON her division!!! SO proud of her!
Jared and I were originally not supposed to see each other for another two weeks due to his golf schedule, but we just couldn't make it that long... I made a mini-trip to see him for a few days and I got to meet his buddy, Chris! He was super nice and it was great hanging out with him too! My Review: 10/10!
This was such a great way to get a little taste of some of the new stuff out on the market! I enjoyed sampling the things before buying a big container of them and not knowing if I would actually like them or not!
My favorite thing was probably the RevHoney - I've never seen anything like it before. It's freeze dried fruit and honey - perfect fuel for workouts without making you feel stuffed! 
Other things in this month's box were Life Equals Omega-3, Pure Matters, Night Food, and Cellucor Super HD.

Hard Work = Results!

So, I already did a post awhile ago about how STRONG IS THE NEW SKINNY...

 I cannot stress enough how much better it feels to be STRONG instead of just skin and bones. 


But, today, I wanted to show you the results of HARD WORK and proper nutrition. 
Thanks to my wonderful boyfriend, I have not only switched up my strength training routine, but I have also eaten more protein than I ever have before! and let me tell you, it feels SO GOOD!!! 
I added more shoulder, back, and leg exercises to my routine.

Being FIT feels great! I don't EVER want to go back to being skin and bones! 

I also mentioned that I have been eating MORE and I haven't gained weight. I've just added lean muscle! 
Jared recommends that I eat a good amount of protein within 45 minutes of my workout so that my muscles are fed the proper nutrients, and let me tell ya, he is SO RIGHT!

First of all, I love that these bars were dense and kept me full! I loved the coating on the outside of the bars. It added a tasty touch! 
I loved all of these bars and give each of them a 10/10!
If I had to choose an order of my favorites, it would look like this: Lemon Twist (tasted like lemon pie! SO GOOD!)  Cherry Almond (Definitely sweet and savory, great flavor!) Blueberry Crunch (Sweet and delicious!)

Life Lately - Picture Edition

Been loving reviewing lots of yummy products! Stay tuned for the reviews!  AND GIVEAWAYS! :-) 
Jared and I went on our first road trip together last week. We went to Georgia and had a fun few days with his parents! He got new golf clubs, we had a day on the boat, his mom and I had girl time while Jared and his dad golfed. It was pure enjoyment!

I got the next book in my FAVORITE series by Karen Kingsbury! So excited to be reading it! I've been dying to find out what happens to Bailey and Brandon and Cody and their love triangle! 

I finally got to wear my new GOLF CLOTHES! :) Jared and I played 9 holes at the public course here in town. We didn't keep score since I haven't played an ACTUAL game of golf since I was like 10 or 12 years old. I didn't do tooooo bad, but it definitely wasn't good either! haha

Easy Pizza Quesadillas

If you're anything like me, you like to make meals that are quick and easy. Well, these pizza quesadillas are quick and easy and super tasty!!!
I found the recipe on one of my favorite blogs by Rachel. Her blog is called, "This Italian Family". Go check it out! 
We changed a few things to create a pizza quesadilla to fit my tastebud preferences. :-) 
Pizza QuesadillasIngredients: Ragu Pizza Sauce 1 whole wheat tortilla small handful mozzarella cheese Deli Ham cut into small pieces Grilled chicken  turkey pepperoni slices
Directions: 1. Heat nonstick pan over medium heat. Fold tortilla in half and spoon sauce onto one side. Layer with cheese and toppings. Close. Microwave for 45 seconds or until cheese has melted. 2. Toss quesadilla in pan for approximately 1-3 minutes or until crispy and slightly brown in color, flip for approximately 1 minute. Slice into pieces and enjoy! You can choose whatever toppings you would like!  I made mine with Ham and mozzarella cheese with EXTRA sauce. Jare…

Healthy Cheesy Chicken Enchiladas

Jared and I love to eat healthy and we enjoy cooking together, so we decided to whip up a healthy version of Cheesy Chicken Enchiladas!

We found this recipe on MyRecipes.com , but changed a few things.  Here is what we did:

Ingredients3 pre-made grilled chicken breast filets (chopped up into tiny pieces)2 cups(8 ounces) preshredded reduced-fat 4-cheese Mexican blend cheese1 2/3 cupsplain low-fat yogurt1/3 cupbutter, melted1/4 teaspoonfreshly ground black pepper1 cup salsa1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of chicken soup (such as Healthy Request), undiluted6 whole wheat tortillasCooking spray
Preparation1. Preheat oven to 350°.2. Combine first 6 ingredients in a large bowl. Remove 1 cup chicken mixture; set mixture aside.
3. Heat a large skillet over medium-high heat. Working with 1 tortilla at a time, brush oil over both sides of tortilla. Add tortilla to pan; cook 5 seconds on each side or until toasted and soft. Remove from pan; arrange 1/2 cup chicken …
