GRAPE jelly and cheese...

so just when I thought I was only in love with strawberry preserves and swiss cheese on anything,
GRAPE JELLY came in and stole my heart away!

Grape Jelly + Swiss Cheese + Cinnamon Raisin Bagelthin= MOUTHWATERING.


This morning, I took the first 2 of my Praxis Exams that I have to pass in order to get my teaching license. I was there at 7 am and didn't leave until 1:30 pm!!! It was a longgggg day. I think I did okay on the tests...I find out my official score in a it's just a waiting game now...

1 whole wheat tortilla
1 wedge laughing cow cheese - garlic and herb flavor
1 veggie burger

Heat up to get the cheese melted and voila!

Scholarship Dinner

Last night I attended a scholarship dinner. I am so grateful for my donors! I really appreciate their generosity in helping me pay for school. I can't believe I only have one semester left, then student teach, then I will GRADUATE COLLEGE! holy moley!

p.s. please excuse the HUGE zit on my forehead and the fact that my hair is a frizzy MESS. the weather has been just AWFUL lately. I'm ready for some sunshine!
Here is our salad that we started with... it had baked pear, almonds, and feta cheese. SO GOOD!

I didn't snap a picture of our main meal, but it was beef, veggies, and potatoes. I don't like beef, so I swapped mine for my daddy's veggies! haha I LOVE ZUCCHINI, SQUASH, and CARROTS! MMMM MMMM GOOD!

Now onto another new creation...
Cinnamon Raisin Bagel Thin
1 thinly sliced apple
Strawberry Preserves
1 slice swiss cheese

Spread bagel thin with strawberry preserves.
Tear up swiss cheese into little pieces and place on top.
Broil in oven for a few minutes.
Add apple slices on top.
Place back in oven for another minute.
Result: YUM!

Fast for the week...

My church challenged us to do a fast for the week coming up to Easter.
I decided to give up music in the car.
Talk about a unique experience!
During the thing that we gave up, our challenge was to pray.
Pray for our church, community, family, friends, anything really.

That first day was just AMAZING.
Yall know how much I LOVEEEEEE music, so to be without it in the car was something else!
I think it was great to just drive down the road and just pray to God with nothing but the sound of nature.
(I KEPT MY EYES OPEN, just in case anybody thought I didn't! haha)

HIIT cardio circuit!

My workout today was OFF DA CHAIN!!!
I did a High Intensity Interval Training Cardio Circuit on the track at the gym.
First, I walked a lap.
100 Jumpin' Jacks.
Soccer shuffle with my left leg first.
Soccer shuffle with my right leg first.
Ran 3 laps.
(all that times three!)


before that, I did my abs/arms strength training.

I've been wanting to do something different with my workout, and this was awesome!
Love tryin' new things!

it's backkkkkkkkkk...

My favorite sub ever is backkkkkkk at Subway!
I seriously screamed when I saw it on the big sign as we were walking into Subway!
Orchard Chicken Salad = YUUUUUUUUUM!!!

After dinner, Kara and I saw the Passion Play at Hilldale Baptist.
Such a great reminder of the ULTIMATE sacrifice that God made for us!
They also added a really fun song at the end that I loved.
I am not joking, we got up and danced while this song was being sung.
Quite a few people in the audience did too.

Overall, I LOVED these! They were so good, and not to mention that just one bag upped my fruit intake by 2 for the day! (these would be really good for little kids that are picky eaters because they wouldn’t even know they were eating fruit – they taste like candy, yes, they are that good!) I enjoyed them by themselves, but my favorite way to enjoy them was mixing them into my yogurt messes! YUM! I’ve listed them in order from my MOST favorite to least favorite!

Pear: 11/10! Way better than I was expecting!

I couldn’t choose which was my favorite between PEAR AND STRAWBERRY BANANA! They were both AWESOME!

Strawberry Banana- 11/10! SO GOOD! The flavors of strawberry and banana were super strong and soooooo tasty!

Banana- 10/10! Such a strong flavor! Loved it!

Mixed Berry 10 out of 10! YUM!

(had to get a little creative with my pictures!)

Apple Cinnamon – 9/10 YUM! (these were so good mixed with Cinnamon Burst Cheerios and Vanilla Yogurt! DESSERT!!)

Apple – 9/10, good, but they didn’t have as much flavor as the other ones!

Pineapple – YUM! 8/10, only because the pieces were so small, it would be hard to eat on the go…BUT it was PERFECT for my yogurt mess! It added extra pineapple flavor and volume.

Strawberry- 8/10- for some reason the plain strawberry didn’t have as strong of a flavor as the strawberry banana, but I DID like the fact that the crisps looked like little strawberries! So cute!


Peach- 7/10- not my favorite. The flavor wasn’t too strong, but I definitely like the other flavors better than this one!

Kelsey's Apple Cheese Jam Sandwich!

To Create:
1 Sandwich thin bun (or regular bread, it doesn't matter)
Spread some strawberry jam on one side (or whatever flavor you desire)
Put a slice of cheese on the other side
Broil in the oven til the cheese is nice and melted
Add apple slices

it's sooooooooooo good!

what a crazy day!

This was my facebook status on Wednesday: CANNOT believe some people... really? Stealing a backpack from the girl's bathroom? Good grief! Thank goodness they just wanted my books and left my binder (WITH ALL MY WORK FROM THE SEMESTER) in it before dumping it on the side of the road! Thank you Jesus that somebody found it!
What a rough day! Well, after my incident, there were 4 more thefts that took place all withing about an hour!!! WHAT IN THE WORLD!?!?!? Ugh! Apparently they caught the girl trying to steal from the bookstore this morning and searched through her car! I wish I would've had my serial numbers for my textbooks written down so I could get them back, but I will survive. There are only a few more days left of this semester and if I'm really in a bind, I can always borrow it from a classmate.

THANKFULLY today has been MUCH better!!! I TOTALLY rocked my presentation in SPED today! I GOT A PERFECT SCORE!!!!! whoop whoop! :)

I am ALMOST done with all of the fruit crisps, so a review will be coming soon! But, I just HAD to post my new FAVORITE combo for a yogurt mess now because IT'S THAT GOOD...

34 Degrees Crispbread

I was sent these two flavors of 34 Degrees Crispbread to try.

The two flavors were Whole Grain and Rosemary.

Whole Grain: It was good and only had like 30 calories per serving, but it wasn't something that I would run to the store and buy right away. I paired it with some laughing cow cheese and enjoyed it as a snack one day.

Rosemary: I forgot to snap a picture, but they looked identical to the whole grain except they were a little more yellow color. I did NOT like this flavor. I couldn't hardly eat one whole cracker. It just didn't taste good to me.

They have six varieties of 34° Crispbread: Natural, Sesame, Cracked Pepper, Rosemary, Lemon Zest and Whole Grain.

I bet the other flavors might have tasted better. I'm not really a rosemary flavoring type girl.

Overall, I LOVED Umpqua Oats! They were so filling and delicious! Great as breakfast, snack, or along with a "breakfast for dinner" meal!

I'm going to post the flavors in order from my MOST favorite to least favorite.

Lei’d Back – 11 out of 10. Felt like I was on vacation in Hawaii – filled with cashews, macadamia nuts, coconut, papaya, cranberries, and cinnamon! SO TASTY!

Mostly Sunny 10 out of 10. So good and flavorful! Creamy thick oats filled with raisins cranberries apples and cinnamon YUM!

Old School -Granny Smith Gone Wild. 9/10 I expected a little more apple flavor, but It was still really good!


Kick Start- 8/10. It was good, but didn’t have as much flavor as the other ones.


Take a Hike- 8/10 – tasted good and kept me full, but it didn’t have as much fruit as the other ones. I like the fruity stuff better!

R U Nutz? – 8/10 – This was very filling, but once again, I like the fruity stuff better. It was still really good though!!

Not Guilty 4 out of 10. gross! I thought I would like this one the most because it is the healthiest - no added sugar, but OH MY GOSH, you can definitely tell the sugar is missing! It was NASTY to me... I'll take a little sugar over bad taste any day! (I think if you were to add a little of your own sugar, this oatmeal would be JUST as tasty as the rest!)

(I don't like chocolate at all, so she graciously tried this one for me! haha)

If you don't like milky or soupy oatmeal then I would cut back on the water.
The taste is very mild, and it may be improved by adding a little extra honey or a banana.
I'd give this oatmeal a 7. Edible, filling, easy to make, biodegradable package, but not the best flavor.

Overall, I loved trying these delicious and nutritious oatmeals! I would totally recommend going out and trying some for yourself! You will NOT be disappointed!
