Turkey Tater Bake


This recipe is SUPER EASY to make and it's the perfect recipe to make ahead and bake when you're ready to eat! It's a sweet dish that you'll love for any time of the day! 

Turkey Tater Bake 


What You Need:
1 lb sweet Italian style turkey sausage links 
1 (30-32oz) bag frozen Alexia Sweet potato puffs
1 cup shredded Italian cheese
1/2 cup mozzarella/provolone cheese
6 eggs
1 and 1/2 cups milk


Preheat oven to 350 degrees.

In a large skillet, cook sausage until no longer pink. Drain fat. Cut into bite size pieces. 


Toss together sweet potato puffs, cooked sausage and 1 cup Italian cheese. Pour into a lightly greased 9x13-inch pan.

Whisk together eggs and milk. Pour over turkey & sweet potato puff mixture.

(Cover and refrigerate at this point if baking later)

Bake uncovered for 60 minutes, or until eggs are set.

When you have about 10 min remaining, top with the 1/2 cup mozzarella provolone cheese.

Passionut Pumpkin Cake Bites

We enjoyed this nut and seed butter on top of muffins, in our oatmeal, on our waffles, but our favorite way to eat it was inside of my recipe for Passionut Pumpkin Cake Bites! 

Passionate Pumpkin Cake Bites

Ingredients:
~1/2 cup finely Shredded carrot
1/2 cup coconut flour
1/2 cup Nuts-N-More Almond Whey Protein 
1/2 cup Passionut Pumpkin Spice Nut butter 
2 tablespoons Coconut Almond Milk 
1 tsp Cinnamon
1 pack Made in Nature Fruit Fusion apple cinnamon dried fruit snacks 

Directions:
First, shred about 7 baby carrots in your food processor with the shredding blade. 


Next, switch to the normal food processor blade and throw all other remaining ingredients inside for about 2 minutes. 

Roll into balls and store in fridge or freezer! We enjoy them both ways.

Mikey's Muffins

We reviewed Mikey's English Muffins in the past, and they have recently come out with some new products. They generously sent some of the new muffin tops, bread, and pizza crusts, as well as some english muffins because they have changed slightly since we last reviewed them.

Our Thoughts:
Our favorite new product was definitely the muffin tops! The lemon blueberry was my favorite and was perfectly light and fruity as a dessert or sweet part of breakfast. I made a oatmeal, yogurt, muffin, and fruit parfait with a lemon blueberry muffin top in an almost empty peanut butter jar and it was mighty tasty! Jared loved the chocolate muffin tops with peanut butter for a snack and also as a sweet addition to breakfast. 

The english muffins were delicious as well. The cinnamon raisin was a great base for a peanut butter and egg sandwich. We used the toasted onion english muffins for our mini burgers one night for dinner. They are so packed full of flavor! 

One night, we babysat this sweet boy and had a make your own pizza night using Mikey's crust! He did a great job helping spread his sauce and put his ingredients on his pizza. Isn't he the cutest??? (His parents gave permission to use these pictures) 


We thought the pizza crust was flavorful, but definitely had more of an egg like texture to it. It still tasted good, but just wasn't exactly a normal "dough" texture. They were the perfect size for a personal pizza. 


They also have a sliced bread loaf and I'm thinking of making some kind of peanut butter french toast with it. Be sure to keep an eye on my Instagram so you can see the recipe when I post it!

Hope Foods Hummus

Our Thoughts:
Jared and I both LOVED each and every flavor. The Kale Pesto was my all time favorite and I don't even like kale. It tasted just like pesto and I wanted to put it on EVERYTHING, so I did :) 

We made mini burgers using ground meat, Mikey's Toasted Onion English Muffins, and hummus and they were SO flavorful! Of course, sweet potato fries were the perfect complement to the burgers. 

One day, I mixed together chicken, zucchini, and kale pesto hummus for a super easy and healthy lunch. 


Then, I made the EASIEST and CREAMIEST, Chicken Pesto Spaghetti Squash bowl that I've ever had. The best part was that it was only 4 simple ingredients!!! I used leftover chicken from the night before, added it to a bowl with spaghetti squash, spoonful of cottage cheese, and 2 spoonfuls of kale pesto hummus. I mixed it all together and warmed it up and HOLY MOLEY! SO GOOD!

Peanut Butter Bark

Today I created a brand new recipe using Purely Inspired Powdered Peanut Butter. 


I know I am pretty much the only person who doesn't like chocolate, but I also know that most people LOVE peanut butter, so I created this peanut butter lover's dream healthy dessert! (or anytime snack because let's be real, peanut butter is ALWAYS good) It is super simple to make. 

Peanut Butter Bark 
Ingredients:
1/2 cup coconut oil
1/2 cup Purely Inspired Peanut Butter
1/2 cup peanuts
1 tsp NuStevia Simple Syrup 

First, heat the coconut oil and powdered peanut butter on LOW. Stir until all of the mixture is smooth and there aren't any coconut oil clumps remaining. 

Next, add the tsp of NuStevia and 1/2 cup of peanuts. 

Then, spray a glass pan with nonstick spray (or you can rub more coconut oil on it) and pour the mixture inside. 

Place it in the freezer for about 20 minutes. 

Lastly, break it up into pieces and enjoy! (FYI, the pieces will be different sizes)


These are super quick to make and they taste delicious! Hope you enjoy!

Our Review:

They don't get squished in Jared's golf bag or my purse. You can see and taste each different nut and seed. It was so cool to see that there were SO MANY superfoods all packed into one bar! We highly recommend these to everyone!

Friday Favorites 12/16

It's time for another round up of our current Friday Favorites! 

Organic Valley has a line of Protein Shakes and man are they tasty! Jared and I both think that they taste like milkshakes! They are super decadent tasting, yet they have Absolutely NO antibiotics, synthetic hormones, toxic pesticides or GMO anything. 

We are HUGE fans of having snacks on hand at all times, and these Mighty Bars and Beef Jerky packs are DELICIOUS and perfect to carry around in your purse or golf bag ;)

I am not a pasta fan, so I tried a few bites to see if I would like it better, and it tastes just like regular pasta. My husband on the other hand is a HUGE pasta fan and he clearly enjoyed it because I came home and he had eaten the ENTIRE box (minus the few bites I tried). He didn't even snap a picture before he inhaled it all. haha He definitely had his protein and fiber quota for that day! One serving of Banza packs 25g of protein and 13g of fiber! ZOODLES 
This isn't sponsored, I just wanted to share that we finally got a spiralizer and are having so much fun making noodles out of zucchini!! We also tried eggplant, but it didn't work quite as well as the zucchini. It's the perfect way for us to eat more veggies and be able to make new meals that usually use pasta (since I don't like pasta). We love it!
