Ham & Cheese Stuffed French Toast

I found this recipe in Hungry Girl 1-2-3 cookbook!

Ingredients:
1/3 cup liquid egg substitute
Cinnamon
2 slices of bread
Cream Cheese
1 slice of American Cheese
2 slices of ham

Directions:
Combine egg substitute & cinnamon on a small plate and set aside.
Spread Cream Cheese on both slices of bread.
Place ham & slice of American Cheese on one piece of bread.
Place other slice of bread on top with cream cheese side down.
Spray skillet with non-stick spray and put on medium-high heat.
Meanwhile, coat both sides of sandwich with egg substitute/cinnamon mixture.
Place sandwich in the skillet and cook for 2-4 minutes on each side.
(I had to put mine in microwave for 10 seconds afterwards because my bread was burning, but the cheese didn't melt on the skillet)

ENJOY!
:)

Hey, I've been doing pretty good with my one-new-recipe-a-month goal!

Now, onto my review!

I immediately dug into these muffins as soon as I opened the box. I'm so glad I did!

Cranberry Canyon Crunch Muffins: 10/10! These muffins were unlike any other muffins that I have ever tasted. They were super soft and moist, but also had a crunch factor! The poppyseeds made this muffin unique! I LOVED the texture! The cranberries gave it a sweet taste, but it was also hearty as well. One muffin kept me full for quite a while! (I usually get hungry soon after I eat a muffin because it doesn't fill me up, but these did!) YUM!

Next up, I tried the San Juan 7 Grain Bread. 9/10! I enjoyed two slices with butter and jam. This bread smelled really good! haha I also thought the taste was good. I liked the texture!

I also used this bread for a new recipe, Ham&Cheese Stuffed French Toast. (I'll post that recipe later) It was really good! The bread held up nicely!
:)

Finally, I tried the Rosemary & Thyme Focaccia. 9/10! The taste was incredible! I enjoyed this along side some grilled chicken and a sweet potato! MMM!

Please check out their website and order some yummy products for yourself!

The Weekly Wrap Up

This has been such a crazy busy week! I love being busy. It's much more fun than being bored!

Here's a brief summary of what went down...

I have missed my second family like crazy these past 3 weeks. I haven't been able to go to their house because of student teaching. I got an email from Mrs. Sue Ellen that said Myrtle couldn't handle not seeing me cold turkey. She asked if I could spare some time to have a lunch date with Myrtle and of course I said YES! I was so excited to see them! But, little did I know that Myrtle would be even more excited to see me. She ran up to me and gave me a huge hug. She would not let me go. Then, she showed me her shirt. She made it herself. It said Kelsey is the best! Then all around it had words that described me. (Funny, kind, nice, awesome, etc...) HOW STINKIN SWEET IS SHE?!?!? I almost cried it was so sweet.

I got my oil changed and noticed the date right away...
MAY 4, 2012.
aka
MY GRADUATION DATE!!!!!!!
I'm sooooo stinkin excited!!!!
:)

I worked for 5 hours straight yesterday working on that dreaded TPA. and you know what? It wasn't as bad as I thought it was going to be!!! I am super happy that I got it done because now I have an ENTIRE month to look over it and edit anything before it is due!!
:)
WHAT A RELIEF!!!
Check out that hot mess I made within those 5 hours... haha

Now, it's time to boycott the Super Bowl and watch some GLEEEEEEEEE!!!
:)

ZYM is a small tablet that dissolves in water for on-the-go hydration. It's portable, so it goes wherever you go. The tablets are formulated for 16-20 oz. of water. Each tube of ZYM contains 10 tablets.

Now, for my review:

Potassium: 50mg
Magnesium: 50mg
Calcium: 30mg

Vitamin C: 100mg
