Bee Free Warrior Mix

If you're looking for a granola that tastes like a soft baked cookie, then Bee Free Warrior Mix is just what you need! It's insanely delicious and we could have easily eaten the entire bag in one sitting. 


What we love the most about this granola is the ingredient list. It's jam packed full of super delicious ingredients that we can pronounce, and they're all very healthy! 



We definitely ate our fair share of handfuls straight from the bag, but we also enjoyed it on top of chia pudding, yogurt, and smoothie bowls as well.

Pizza Casserole

Jared and I love to eat pizza, but we also like variety, so I came up with this Pizza Casserole! 


Ingredients:
13 oz. Fully Cooked Turkey smoked sausage 
1 bag frozen Peppers & onions 
1 Box of plain couscous
1/2 cup plain Greek yogurt 
1/4 cup Pesto 
1/2 cup pizza sauce 
1 tsp garlic powder
1/2 cup Mozzarella cheese 

Preheat oven to 350*F. 

Pour two cups of water into a pot and boil, then add the whole box of couscous. (Be sure to read your specific box's instructions as they may differ in measurements) 

Cut sausage into bite size pieces and brown in the skillet. 

Sauté the peppers and onions in another skillet at the same time. When they're done cooking, drain the liquid. 

In a large bowl combine couscous, peppers, Greek yogurt, garlic powder and sauces. 

Pour into a greased 9x13 baking dish. Then, place sausage on top and sprinkle with mozzarella cheese. 

Cover with aluminum foil and bake for about 15 min. Then, remove foil and cook another 10 min.

Energy Bites, Donuts, and More with Binnie's Coconut Butter

If you're looking for a sweet spread that's healthy for you, then Binnie's Coconut Butter is just for you! It is made with just a few simple ingredients, but tastes like candy! The coolest part about this coconut butter is how SPREADABLE it is! It's perfect to top your favorite treats and snacks!

Coconut oil is the oil extracted from the coconut, while coconut butter is made from shredded coconut or the meat of the coconut and coconut oil. Similar to peanut butter, we use Binnie’s Coconut Butter as a superfood spread on toast, in smoothies, on pancakes or waffles, as a fruit dip, on sweet potatoes, and as a substitute for butter or toppings in baking! The possibilities are endless!

Coconut is full of medium-chain triglycerides which is saturated fat that is GOOD for you! It’s metabolized in the liver and used up as energy right away WHILE keeping you full and satisfied for longer. Coconut is classified as a “superfood” and has a wide range of health benefits from stimulating the metabolism, improving brain function, and it even contains lauric acid, which kills bacteria and can ward off infections in the body. We loved it straight from the jar with a spoon, but we also loved it in our oatmeal, smoothies, on top of pancakes, and inside some delicious recipes!!! 



Ingredients:
1 cup oats 
1/2 cup peanut butter
1/4 cup Vanilla @binniescoconutbutter 
1 scoop @vitalproteins Vanilla and Coconut Water Collagen Whey 
Melt pb and coconut butter on stovetop over low heat until mixed thoroughly. 
Next, remove from heat & add one scoop of Vital Proteins Collagen Whey to the pb & coconut butter mixture. 
Then, add 1 cup oats and stir until all the oats are sticking to the peanut butter mixture. 
Put in bowl and refrigerate for 30 minutes. 
Then, roll into balls and store in freezer or fridge!




COCOAnut Donuts  
1/2 cup Dark chocolate Binnie's coconut butter
1 tbsp honey
1/4 cup oats 
2 tbsp coconut flour 
1 egg
3 tbsp water
1 tsp baking powder 

First, heat coconut butter and honey on stovetop on low heat until melted. 

Then, mix remaining ingredients with the coconut butter mixture in a blender. 

Fill mini donut pan about 2/3 full. Makes about 9 mini donuts. 

Bake on 400*F for about 10 min.

Paleo Shortbread Cookies with Coconut Butter Glaze

Today I have two amazing companies to share with you. These two combined made some AMAZING cookies and I hope you enjoy them as well.

I've never used cassava flour before, and it was fun making these cookies with it. The cassava flour was a nice texture for the cookies. They turned out really well. It was fun to use a different kind of flour! I also attempted to make some grain free tortillas, but it didn't turn out so well. I'll leave those up to the grain free pros! I am looking forward to following a recipe for them and I will definitely share on my Instagram if you keep an eye out! :)

Okay, onto the COOKIES!!! 


Ingredients:
1/3 cup coconut oil softened
1 cup cassava flour
1 egg
1 tbsp baking powder
1 tbsp cane sugar 
My coconut kitchen Toasted Coconut butter 
*Optional* Unsweetened coconut flakes 

Mix first 5 ingredients in a bowl. Knead with hands. Form into small cookies about the size of a half dollar. 

Bake at 350*F for about 13 min. 

Let cookies cool for about 30 minutes in the fridge.


Heat coconut butter in microwave for about 30 seconds to soften. Pour  some into a tiny ramekin and then dip each cookie into the coconut butter as a glaze. 


*Optional* Sprinkle unsweetened coconut flakes on top. 



These turned out to be absolutely DELICIOUS!! They are crisp and light with a sweet coconut flavor.  Hope you enjoy!

Friday Favorites!

2. Jared and I made our first ever homemade apple pie turnover FROM SCRATCH! It was lots of fun to just spend the extra time in the kitchen preparing this dessert together. Cooking is an easy "date" for us because we both love it and it's quality time. Also, this pie was SO GOOD. We were proud of ourselves. We even made a homemade caramel sauce to top it with. YUM! 


 3. Rest/Recovery Days
I am enjoying rest days more because it really makes my body feel better. I saw this tip on Amanda Fit Life's instagram page. Raising your legs for 20 minutes helps the lactic acid build up in your legs and aids in recovery. Try it sometime!

5. More newborn baby snuggles!!! 
Cece is almost one month old now. I had a blast just snuggling with her for about 3 hours while her parents went to dinner one night. I just couldn't put her down! :) 


 6. Fitsnack 
I love love love getting these boxes in the mail every month. This one was so jam packed full of delicious goodies, that I immediately dug into one of those KaKookies AND... I was so distracted by the awesomeness of the box that I forgot to snap a picture and started eating some of the stuff over the next few days before I remembered. #bloggerfail But, it was filled with Beanitos, Kakookies, Amsety Bars (Which were SUPER good btw!! P.S. They are the first protein bar to support liver health), Tickle Water, Turkey Jerky and some runners gum. Don't forget to use my link for a discount on your first box!!!

Cashew Coconut Bites, Maca Muffins and Freezer Fudge w/ Wild Foods Co


Boy, do I have quite the line up of healthy treats to share with you today! Thanks to Wild Foods Co for sending some goodies to inspire these recipes. 

First, I want to share part of Wild Foods Co philosophy from their website:

How awesome is that?! Not only is their philosophy awesome, their food is incredible as well! The protein powder and maca used in these recipes was not chalky at all. The coconut oil was delicious. The sweet cacao nibs were thoroughly enjoyed by Jared when he mixed them into yogurt and oats. I am still coming up with more recipes, so keep your eyes on my Instagram page


Now, onto the recipes...

Freezer Fudge
Ingredients:
1 cup milk
1/2 cup nut butter
1/2 cup Vital Proteins Cocoa Collagen 
1 tablespoon Wild Foods Co coconut oil 

Mix all ingredients on low heat on the stovetop until a consistent batter forms. 

Pour batter into a greased baking dish and spread evenly. 

Top with whatever you desire. I topped mine with cacao nibs. 

Freeze for at least 30 minutes before breaking into pieces. 



Coconut Cashew Bites
Ingredients:
1 cup cashews 
1 pack @wildfoodsco Natural Whey protein 
1/2 cup peanut butter 
1 tablespoon @Wildfoodsco coconut oil 
1/4 cup coconut flakes 
1 scoop Whey protein puffs


Mix first 4 ingredients in a food processor until a dough forms. 

Then, knead in by hand the last two ingredients. 

Leave dough in fridge for about 30 minutes and then roll into balls.  

Store in freezer.



Maca Muffins
Ingredients:
1 tablespoon Maca 
2 scoops creamy vanilla protein from wild foods
1 large ripe Banana
Teaspoon Baking powder
1 egg 
1/4 cup milk
1 tablespoon honey
1 cup Oats  
1/2 tsp Pure vanilla extract
1 tsp cinnamon 
*Crushed peanuts and coconut for topping* 

Blend everything in a food processor or blender until a batter forms. 

*Optional: Add a topping. I topped a few of mine with peanuts and coconut flakes*

Bake at 350*F for about 12 min. Makes 24 mini muffins.

TigerNut Smoothie Mix Super Boost Protein Bars + Review

I recently discovered TigerNut while browsing through Instagram and had to check it out.  Did you know... TigerNuts are not nuts, they are small root vegetables which comprised 80% of our Paleo ancestors’ diet around 2 million years ago. This ancient superfood originates from Africa. It is currently cultivated in West Africa & Spain. 

Organic Gemini was kind enough to send some TigerNut Smoothie Mix for me to try!
TigerNut Smoothie Mix is a powerful smoothie booster that improves the gut's well-being and potentially strengthens the immune system. The combination of energy-packed protein and prebiotic fibers controls cravings & makes you feel fuller longer.


We loved it mixed into our smoothie bowls! Smoothies don't usually hold Jared and I over for too long, but this really did make us feel fuller longer. It's not overly sweet, but it's not too "earthy" tasting either, like some other powders we've added into smoothies. 


Another way we enjoyed it was in our oatmeal. 

We also mixed it into some no bake protein bars! YUM! 


                                   
What You Need:
1/2 cup milled flaxseed

1/2 cup Vanilla Almond Whey protein powder
2 tablepoons TigerNut Smoothie Super Boost
1⁄2 cup peanut butter
1 tablespoon chia seeds 
1⁄2 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 cup milk  


Mix everything in the food processor until a batter forms. Then, spread evenly into a baking dish. 

*Optional* You can top with peanuts or another topping of your choice. 

Freeze for about 2 hours and then cut into squares.

Creamy Spinach and Chicken Casserole + Nancy's Yogurt Review

This casserole is super creamy and cheesy. It's very easy to make and I like to call it healthy "comfort food" because it hits the spot, without a lot of heavy ingredients. Hope you enjoy!  


Creamy Spinach and Chicken Casserole



Ingredients:

1 lb. ground chicken
16 oz. riced cauliflower 
4oz baby spinach 
1 large egg
½ cup Nancy's cream cheese
½ cup shredded mozzarella cheese
Garlic powder, Salt and pepper to taste 



Directions:
Preheat oven to 450°F. 
Boil the riced cauliflower. 
Heat ground chicken with olive oil on the stovetop until fully cooked and no longer pink.
Drain cauliflower and Allow it to cool. Return back to the warm pot and mix in the spinach. After it's mixed well, squeeze out as much liquid as possible.
Place the cauliflower mixture in a bowl and add the egg, Cream cheese, salt, pepper and garlic powder. Mix to combine.
Transfer the mixture to a glass baking dish.
Bake in the oven for about 18 minutes until a little browned on the edges.
Top with mozzarella cheese. Bake another 8-10 minutes until cheese is melted and edges are brown.

Nancy's Yogurt has quite the line up of yummy foods. 


The cottage cheese was delicious and it's one of my favorite night time snacks. 



Jared enjoyed his favorite night time snack of a yogurt bowl. The organic yogurt is so thick and creamy!!! 

One morning, I made some toast with cream cheese and peanut butter. The combo is insanely delicious!!! You've gotta try it sometime! Nancy's cream cheese is super thick and creamy, just the way we like it. YUM! 


What we love about Nancy's is the fact that they don't add weird ingredients to their products. They are FRESH and taste absolutely delicious naturally!
