Paleo Shortbread Cookies with Coconut Butter Glaze

Today I have two amazing companies to share with you. These two combined made some AMAZING cookies and I hope you enjoy them as well. 

First, here's a little info about each company.
Our coconut butters are surprisingly smooth. We have created a variety of unique and delicious flavors to suit every palate and use. Since wellness was at the heart of this endeavor, each delicious flavor was created without using ingredients that could possible cause damage to our bodies. Everything we make is from organic ingredients. Most flavors have no added sugar and are free from common food allergens like gluten, dairy, peanut and soy. We enjoyed pouring this coconut butter on our oatmeal and smoothies. It is super easy to melt and spread on anything really. It also tastes amazing just straight out of the jar! It tastes great without all that added junk. Our favorite way to eat it was definitely on top of some cookies, which I'll be sharing at the bottom of the post.

I've never used cassava flour before, and it was fun making these cookies with it. The cassava flour was a nice texture for the cookies. They turned out really well. It was fun to use a different kind of flour! I also attempted to make some grain free tortillas, but it didn't turn out so well. I'll leave those up to the grain free pros! I am looking forward to following a recipe for them and I will definitely share on my Instagram if you keep an eye out! :)

Okay, onto the COOKIES!!! 


Ingredients:
1/3 cup coconut oil softened
1 cup cassava flour
1 egg
1 tbsp baking powder
1 tbsp cane sugar 
My coconut kitchen Toasted Coconut butter 
*Optional* Unsweetened coconut flakes 

Mix first 5 ingredients in a bowl. Knead with hands. Form into small cookies about the size of a half dollar. 

Bake at 350*F for about 13 min. 

Let cookies cool for about 30 minutes in the fridge.


Heat coconut butter in microwave for about 30 seconds to soften. Pour  some into a tiny ramekin and then dip each cookie into the coconut butter as a glaze. 


*Optional* Sprinkle unsweetened coconut flakes on top. 



These turned out to be absolutely DELICIOUS!! They are crisp and light with a sweet coconut flavor.  Hope you enjoy!
